The beginning of the journey into the Ogliastra culinary tradition then continues with the burrida, according to the grandmother’s recipe (with race, walnuts, and vinegar), with fish ravioli and ravioli with cuttlefish ink, prepared with fresh pasta.

Il fantasma della siccità che ha perseguitato le campagne sarde nelle ultime stagioni sembra essere, almeno per ora, un ricordo lontano. Le piogge incessanti che hanno caratterizzato il mese di gennaio, e che continuano a bagnare l’Isola in queste ore, hanno ribaltato lo scenario idrico regionale, portando il sistema degli invasi a un livello di riempimento complessivo del 71,7%.

Secondo i dati aggiornati al 31 gennaio, il volume d’acqua stoccato nelle dighe sarde ha raggiunto i 1.308 milioni di metri cubi. Si tratta di una scorta fondamentale che mette in sicurezza l’irrigazione dei campi e l’approvvigionamento civile in vista della prossima estate, rassicurando un comparto agricolo messo duramente alla prova negli ultimi anni.

La distribuzione delle piogge ha premiato in modo particolare alcuni territori. I bacini di Ogliastra, Basso Sulcis e Alto Taloro hanno raggiunto la soglia massima, segnando un 100% di volume utile invasato: dighe piene e gestione a regime per queste aree. Buone notizie anche dal sistema Tirso-Flumendosa, il cuore idrico della Sardegna, che si attesta su un rassicurante 70,3%.

Tuttavia, il quadro regionale non è privo di zone d’ombra. L’unica nota stonata arriva dall’Alto Cixerri, dove la pioggia non è bastata a risollevare le sorti di un bacino in sofferenza cronica. Qui, le dighe di Punta Gennarta e Medau Zirimilis restano in condizioni critiche, con una percentuale di riempimento che non supera il 17,6%, rendendo necessari monitoraggi costanti per i prossimi mesi.

Nonostante l’isolata criticità del Cixerri, il bilancio complessivo è estremamente positivo. Con le piogge che continuano a cadere, il dato del riempimento è destinato a salire ulteriormente nella prima settimana di febbraio. Per i consorzi di bonifica e le migliaia di aziende agricole dell’Isola, il 2026 si apre sotto i migliori auspici, garantendo la programmazione delle colture senza l’incubo dei razionamenti.
