Sitting comfortably on the patio of this restaurant, enveloped by the delicate sea breeze that caresses the white curtains of the structure, while enjoying the dishes accompanied by a glass of Vermentino: this is the experience that the Basaùra Restaurant has been offering, for many years, to its customers.

We recommend that you start your experience in this restaurant with a raw plate. Oysters, mussels, shrimps, scampi, and clams from local fishing boats are served on an ice plateau to preserve their taste and freshness. The beginning of the journey into the Ogliastra culinary tradition then continues with the burrida, according to the grandmother’s recipe (with race, walnuts, and vinegar), with fish ravioli and ravioli with cuttlefish ink, prepared with fresh pasta.

The fregula, with local clams and bottarga, is the “sovereign” of the first fish dishes from Basaùra. Those who have never tasted it, have the opportunity here to taste a version that combines high-quality raw materials and a preparation anchored to tradition.

And while the Basaùra staff pours you another glass of Vermentino you can order a crispy and tasty fried fish based on shrimp, squid, and small local fishing: the sea is before your eyes and on your palate.

Marco, the owner of the restaurant, a profound connoisseur of the area, and always ready to give advice on places to visit, accompanies customers in choosing the catch of the day, in the right wine to match. And after just one lunch, a last look at the sea and a thought about what you tasted: it is easy to go from “Welcome to Ogliastra” to a sure “We will meet again very soon”.

Se la legge vieta il consumo, la tecnologia lo trasforma in aroma. È questa l’ultima provocazione firmata MSCHF, il collettivo artistico americano noto per sfidare i confini del mercato, che ha appena lanciato le “Illegal Chips”. Si tratta di una serie di patatine che ricreano sapori banditi dalle autorità sanitarie mondiali, tra cui spicca, per la gioia e il timore dei palati più audaci, il leggendario Casu Marzu sardo.

Al centro dell’attenzione c’è proprio lui, il re dei formaggi proibiti. Il Casu Marzu, tradizionale specialità sarda di latte ovino colonizzata dalle larve di Piophila case, è ufficialmente illegale sia negli Stati Uniti che in tutta l’Unione Europea a causa delle norme sui parassiti. Ma grazie alla “scienza degli aromi”, MSCHF è riuscita a sintetizzarne il profilo organolettico senza l’uso di ingredienti proibiti o rischi per l’intestino.

Il risultato? Un prodotto vegetariano che rispetta l’odore  pungente dell’originale, offrendo un sapore di formaggio deciso, persistente e assolutamente unico. Un’esperienza sensoriale così intensa che gli stessi creatori avvertono scherzosamente: «Non baciate nessuno dopo averne mangiato un sacchetto».

La collezione non si ferma alla Sardegna. Il kit “illegale” comprende: il Fugu, il pesce palla 1.500 volte più letale del cianuro, ricreato in una versione saporita, dolce e sapida allo stesso tempo e il Cavallo, un gusto che sfida le costruzioni sociali su quali animali siano commestibili e quali no, spingendo il limite del provocatorio.

Dietro l’operazione commerciale si cela un vero e proprio Manifesto filosofico. MSCHF sostiene che la distinzione tra ciò che è cibo e ciò che non lo è sia una semplice costruzione sociale. «Siamo nati troppo tardi per esplorare la Terra e troppo presto per esplorare il cosmo, ma siamo nati esattamente in tempo per mangiare patatine sintetiche al gusto di cavallo o formaggio parassitato», dichiarano dal collettivo.

L’obiettivo dichiarato è il passaggio dal “realismo alimentare” (la simulazione di carne di manzo o pollo) al “modernismo alimentare”: l’uso della chimica per slegare la produzione di cibo dagli animali vivi e dai danni dell’agricoltura industriale. Un futuro di “onnivorismo di lusso sintetico” dove il sapore non dipende più dalla legalità o dalla natura, ma dalla pura scienza.
