The beginning of the journey into the Ogliastra culinary tradition then continues with the burrida, according to the grandmother’s recipe (with race, walnuts, and vinegar), with fish ravioli and ravioli with cuttlefish ink, prepared with fresh pasta.

L’idea è tanto semplice quanto geniale: utilizzare la resistenza e la fragranza del pistoccu di Ilbono per creare dei “cestini” croccanti, pronti a custodire i sapori decisi della nostra terra.

Per questa preparazione, che unisce la panificazione ogliastrina con i profumi dell’orto e del pascolo, avrete bisogno di:

Fogli di pane pistoccu (preferibilmente di Ilbono);

Carciofi freschi;

Salsiccia sarda (arrostita o ripassata in padella);

Mozzarella o formaggio filante;

Olio extravergine d’oliva, vino bianco, prezzemolo e salvia.

Il procedimento: il segreto di questa ricetta risiede nella gestione della consistenza del pane. Ecco i passaggi per un risultato perfetto: bagnate leggermente i fogli di pistoccu e adagiateli sul tavolo, coprendoli con panni umidi per circa 30 minuti. Questo passaggio è fondamentale per renderli elastici senza romperli.

Mentre il pane riposa, trifolate i carciofi in padella con un pizzico di prezzemolo e una sfumata di vino bianco. Parallelamente, preparate la salsiccia: l’ideale è cuocerla allo spiedo (arrosto) per un sapore più rustico, ma la padella resta un’ottima alternativa per chi ha poco tempo.

Una volta ammorbiditi, adagiate i fogli di pane sopra delle ciotole di porcellana capovolte o all’interno di esse per dare la forma a “cestino”. Spennellate generosamente con olio EVO e aggiungete un mazzetto di salvia per profumare il tutto. Riempite poi gli scrigni di pane con i carciofi, la salsiccia tagliata a tocchetti di circa 3 cm e terminate con la mozzarella a pezzetti. Infornate a 180°C per circa 7-8 minuti. Il pane tornerà croccante prendendo la forma della ciotola, mentre il formaggio creerà una golosa crosticina filante.
