We recommend that you start your experience in this restaurant with a raw plate. Oysters, mussels, shrimps, scampi, and clams from local fishing boats are served on an ice plateau to preserve their taste and freshness. The beginning of the journey into the Ogliastra culinary tradition then continues with the burrida, according to the grandmother’s recipe (with race, walnuts, and vinegar), with fish ravioli and ravioli with cuttlefish ink, prepared with fresh pasta.

The fregula, with local clams and bottarga, is the “sovereign” of the first fish dishes from Basaùra. Those who have never tasted it, have the opportunity here to taste a version that combines high-quality raw materials and a preparation anchored to tradition.

I suoi ingredienti sono semplicissimi: miele e nocciole. A impreziosire il dolce dei decori realizzati in glassa reale. Ecco la “tumballa”, una ricetta antichissima che trova molte parentele in altrettante preparazioni del Mediterraneo. Ma gli antenati della tumballa possono variare da una cultura all’altra e nel corso del tempo pur mantenendo gli stessi ingredienti, miele e nocciole. Ad esempio il “Loukoumades”, un dolce tradizionale presente in diverse culture del mondo classico e successivamente adattato in varie forme e varianti nelle cucine di molte regioni.

Ateneo da Naucrati menziona dolci simili nelle opere del teatro greco e, il nome che usa Chiara Lai per denominare il dolce è citato nelle ricette del cuoco ottocentesco Giovanni Vialardi di Casa Savoia, ma la preparazione è molto molto antica. La tumballa insomma ha mantenuto la sua popolarità attraverso i secoli, anche se con diverse variazioni e adattamenti.
