The seafood tasting and a delicious appetizer, are characterized by the fish product caught and processed daily. This dish is made up of different tastings which, based on this ethical choice, respecting the sea and using local products, vary continuously.
Here tradition is in synergy with innovation, enhancing the raw materials, so as to be able to savor many different preparations: bluefin tuna tartare, small “culurgiones” of marine plankton stuffed with fish soup, octopus on ricotta cream and thyme, burrata shrimp and caviar.
The fresh pasta of the first courses is handmade by the kitchen of Sa Cadrea. The culurgiones are the great protagonists, as well as the malloreddus, cooked with sheep ragù and purple carrot, which gives them this particular color.
On the second courses, from the dishes of land to those of the sea, the philosophy of “made in Ogliastra” is strictly followed. One of the secrets of excellence in cooking is given by the quality and the art of cooking. This is why is used an high-tech equipment such as the famous Josper oven. Thanks to living charcoal cooking, dishes such as lamb, pork, and grilled fish are enhanced.
In Sa Cadrea it is possible to enjoy an excellent pizza, enhanced by always quality local products. Even for those who are intolerant to gluten, there is the opportunity to enjoy a pizza made on-site, avoiding the pre-frozen base. Various quality lactose-free products are planned.
The ice creams are made by a local company, with 100% Ogliastra ingredients, as are the hand-made desserts.
